After dinner, I like to reward myself with something sweet before bed. I’ll usually grab a sugar-free jello or sugar-free pudding, but it’s nice to switch it up if I have a little prep time during the day or even the night before. Try putting a ripe banana in the freezer. Once it’s frozen, put it in a food processor, and it will be the same consistency as ice cream.
I also like to make my own chia seed based pudding — a great source of fiber. Soak the chia seeds in almond milk and sprinkle a little cinnamon to sweeten it, or you can add a half teaspoon of vanilla extract. Top it with fresh berries and let it sit in a closed container in the fridge through the day or overnight. They’re both so quick and easy to make and can last about five days frozen/refrigerated. Can’t get much easier than that!
