Grab & Go Breakfast

If you’re anything like me, having a sit-down breakfast is usually not an option. Preparing myself the night before makes my mornings run more smoothly while knowing I’m getting the nutrients I need to fuel my body and kick start my day. Here are a few of my super simple go-to recipes.

  • Overnight Oats — In a container or jar, put plain oatmeal with almond milk. I like to add in some almond butter or natural peanut butter, a little cinnamon, and fresh berries. Mix it all together, let it sit in the fridge overnight, and you’ll have a tasty breakfast waiting for you in the AM!
  • Egg Muffins — You’ll need a muffin pan for this! I start by whisking together 5 whole eggs and 5 egg whites in a bowl. I like to gather red and green peppers, yellow onion, spinach, and tomatoes and chop them up finely. You can choose to sauté the veggies for a couple of minutes to make them more tender before mixing them in with the eggs. Have your oven preheated to 350ºF, spray your muffin pan with coconut oil cooking spray, pour the egg mixture into each evenly, and cook for 15 minutes or so. After cooling, put them in an airtight container and place into the fridge. They can last for up to four days like this (or if you need to freeze them, wrap them individually and thaw overnight in the fridge). Microwave them until they’re warm and you’re good to go.
  • Apple “Sandwiches” — No bread involved! Slice up an apple, put some almond butter or natural peanut butter between two of your slices, and voilÍ . Squeeze some lemon juice on the slices if you plan to prepare this ahead of time.
